What inspired you to create a fusion of Argentine and Lebanese cuisines at Maté, and how do these culinary traditions complement each other?
The inspiration for our culinary journey stems from the significant immigration from the Middle East, particularly from Lebanon to Argentina, during the early 20th century. This period, spanning the 1900s to the 1920s, saw a rich exchange of cultures and gastronomies. Lebanese immigrants brought with them their unique culinary traditions, which blended harmoniously with Argentinean flavors. This cultural blend introduced us to delightful combinations like Yerba Mate with hummus, Patagonian lamb, and Argentina’s famous meats, creating a unique culinary experience.
Can you tell us about your journey as a chef and how it led you to Maté?
I began my culinary career in Argentina as a commis in the banquet kitchen at the Sheraton hotel. After four years, I expanded my experience by working in various establishments across Argentina, followed by positions on cruise ships, luxury yachts, and in countries such as Mexico, Ghana, and the Caribbean islands. In 2023, I had the opportunity to join the kitchen team at the Park Hyatt and Villas in Abu Dhabi.
What are some signature dishes at Maté that best represent the Argentine-Lebanese fusion?
At Maté, we offer many dishes that showcase the fusion of Argentine and Lebanese cuisine. For example, our Palta Avocado is grilled over charcoal and wood in the traditional “Parrilla” style and is served with hummus and dukkah.
How do you source your ingredients, and do you use any special Argentine or Lebanese products?
All our products are sourced from the most reputable suppliers, and we conduct thorough food testing on each item to ensure optimal quality and flavor.
What has been the response from diners to this unique blend of flavors, and have any dishes become particular favorites?
Following dinner, our guests consistently praise the exceptional quality and flavor of our meat as “AMAZING,” particularly highlighting the enticing aroma and taste provided by our “Parrilla” or grill. Our standout dish, the “Costillar al asador,” features open-fire short ribs cooked for seven hours using secret techniques.
How do you balance traditional recipes with the innovative fusion concept at Maté?
We strive to add a unique twist to each dish on our menu. Take, for instance, our traditional Humita, a dish originating from the north of Argentina. We enhance it with a garnish known as charcoal meringue, resembling charcoal but entirely edible, imparting flavors reminiscent of roasted red capsicum.
Can you share any challenges you faced in creating this fusion menu and how you overcame them?
We constantly encounter diverse challenges with our culinary fusion, aiming to cater to the preferences of each unique and special guest who visits Maté. Adapting our recipes or standards when necessary is essential to ensure their satisfaction and happiness.
How do you see the culinary scene evolving in Abu Dhabi, and what role does Maté play in that landscape?
Maté restaurant is now recognized as a selected restaurant in the Michelin guide. Our mission is to serve as ambassadors of Argentinean gastronomy and culture.
Are there any upcoming menu items or special events at Maté that you’re particularly excited about?
We are thrilled to announce our new Saturday brunch, “CAMINO DE LOS ANDES,” which takes you on a culinary journey through the Andes mountains and Latin America, featuring traditional flavors from Colombia, Venezuela, Peru, Ecuador, Chile, and, of course, Argentina.
